Brown Butter Scallops

Ingredients
- 1 Lb Jumbo sea scallops, side muscle removed
- Kosher salt and freshly ground black pepper
- 2 tablespoons (1/4 stick) unsalted butter, cut into small pieces
- Parsley
- 2 tsp. fresh lemon juice
- 1 tablespoon olive oil
Instructions
- In a cast iron skillet, add butter and olive oil. Brown butter for about one minute. Sear scallops on high heat for about one minute, until golden. Garnish with parsley and squeeze lemon juice.
